Pizza dough
- 220 g water
- 1 tsp caster sugar
- 2 tsp dried instant yeast
- 400 g baker's flour
- 30 g extra virgin olive oil, plus extra to grease
- 1 tsp sea salt
Pork topping
- 10 g peanut oil
- 20 g sesame oil
- 500 g pork mince
- 60 g sugar
- 10 g fish sauce
- 2 pinches ground black pepper
- 2 eschalots
- 1 garlic clove
- 1 stalk lemongrass, white part only, bruised and cut into pieces
- 20 g soy sauce
Pickled carrot
- 100 g white wine vinegar
- 70 g caster sugar
- ½ tsp sea salt
- 2 carrots, peeled into ribbons
Assembly
- 50 g mayonnaise (see Tips)
- 15 g pork crackling, to serve
- semolina, to dust
- 150 g chicken liver pâté (see Tips)
- ¼ cucumber, cut into thin slices
- 20 slices pickled jalapeño chillies, retaining 2 tbsp of pickling liquid
- 1 fresh long red chilli, trimmed and sliced to serve
- 12 sprigs fresh coriander, leaves only, to serve
