- 500 g natural yoghurt
Dressing
- 1 garlic clove
- 2 tsp dried mixed herbs
- 50 g honey
- 30 g wholegrain mustard
- 1 - 2 pinches sea salt, to taste
- 1 pinch ground black pepper, to taste
- 60 g apple cider vinegar
- 120 g olive oil

- 50 g shelled unsalted pistachio nuts
- 1 tbsp sesame seeds
- 2 tsp sunflower seeds
- 1 tsp sea salt flakes, plus extra to taste
- 500 g Roma tomatoes, cut into thick slices
- 500 g heirloom tomatoes, cut into slices, or cherry tomatoes, cut into halves
- 60 g pitted green Sicilian olives, cut into slices
- ¼ red onion, cut into thin slices
- 120 g rocket, or fresh baby spinach leaves
- 30 g snow pea sprouts
- 4 - 5 sprigs fresh basil, leaves only
- 1 pinch ground black pepper, to taste
