  • 10 g toasted sesame oil
  • 4 garlic cloves
  • 4 Tbsp dark soy sauce
  • 1 Tbsp Worcestershire sauce
  • 2 Tbsp lime juice

  • 8 chicken thighs, skin on, bone in (see tip)

  • 350 g carrots, sliced (2-3 cm) (see tip)
  • 350 g swede, cut in pieces (3-4 cm)
  • water, to cover
  • 25 g unsalted butter, diced
  • 20 g extra virgin olive oil
  • ½ tsp ground ginger
  • 1 tsp fine sea salt
  • ¼ tsp ground black pepper
