- 250 g dried egg noodles
- 1 garlic clove
- 3 cm piece fresh ginger, peeled
- 1 - 2 fresh chillies, to taste and deseeded, if preferred
- 4 sprigs fresh coriander, leaves, for garnishing, and stalks

- 2 cm piece fresh ginger, peeled
- 2 tbsp oil
- 1 brown onion, cut into wedges and layers separated
- ½ red capsicum, deseeded and cut into thin slices
- 1 carrot, cut into matchsticks
- 150 g zucchini, cut into batons (5 x 1 cm)
- 350 g medium raw prawns, peeled and deveined
- 2 tsp soy sauce
- 1 - 2 pinches ground white pepper, to taste
