Ingredients

  • 1000 g daikon (Japanese radish), ends trimmed, trimmed, if
    necessary, to fit blade width
  • 2 heaped Tbsp beef stock paste, homemade
    or 2 beef stock cubes (for 0.5 l each), crumbled
  • 1 tsp fine sea salt
  • 1300 g water
  • 2 star anise
  • 1 cinnamon stick
  • 20 g fresh root ginger, peeled, cut in round slices (2 mm)
  • 300 g beef fillet steak, thinly sliced (approx. 1-2 mm)
  • 10 g fish sauce
  • 10 g fresh coriander leaves, thinly chopped (1-2 mm)
  • 10 g spring onion, finely sliced (1-2 mm)
  • ½ tsp freshly ground black pepper
  • 1 lime, sliced
  • 100 g fresh bean sprouts
  • 1 fresh chilli, thinly sliced (2 mm)
  • Thai chilli sauce, for garnishing (optional)
  • hoi sin sauce, for garnishing (optional)
