Ingredients

  • 2 garlic cloves
  • 1 fresh bird's eye chilli, deseeded, cut in pieces
    or 1 fresh red chilli, deseeded, cut in pieces
  • 500 g boneless pork meat, sinew free, cold, cut in pieces (3 cm)
  • 10 g fish sauce
  • 1 ½ tsp salt
  • ¼ tsp ground black pepper
  • 770 g water
  • 2 pinches sugar
  • 1 tsp dried yeast
  • 250 g Italian flour type 00 (see tip)
  • 15 g oil, plus extra for frying and greasing
  • 200 g carrots
  • 150 g daikon radish
  • 3 sprigs fresh coriander, leaves only, plus extra for serving
  • 30 g rice vinegar
  • 1 tsp sugar
  • 4 tbsp mayonnaise
  • 1 - 2 tbsp sriracha sauce
  • 100 g pâté, any type (optional)
  • 50 g cucumber, cut in slices
