Wonton nachos
- 125 g wonton wrappers, cut on the diagonal to form triangles
- olive oil spray, for coating
Pork mince
- 100 g mozzarella cheese, cut into pieces (3 cm)
- 100 g cheddar cheese, cut into pieces (3 cm)
- 20 g peanut oil
- 2 garlic cloves
- 3 cm piece fresh ginger, peeled
- 1 fresh long red chilli, trimmed and deseeded, if preferred
- 500 g lean pork mince
- 1 tsp sugar
- 20 g soy sauce
- 40 g hoisin sauce
- 20 g oyster sauce
Asian salad
- ¼ red cabbage, finely shredded (approx. 200 g)
- 2 spring onions/shallots, trimmed and cut into thin slices
- 4 sprigs fresh coriander, leaves only
- 1 avocado, flesh only, cut into bite-size pieces
- ½ lime, juice only
- 1 tbsp rice wine vinegar
- 1 tsp sesame oil
- sea salt, to taste
- ground black pepper, to taste
- 1 - 2 fresh jalapeño chillies, trimmed to taste, to serve (see Tip)
