Ingredients

  • 50 g cashew nuts
  • 550 g water, plus extra for soaking
  • 1 ½ tsp fine sea salt, to taste, plus 1 pinch
  • 4 potatoes, large (approx. 680 g), cut in pieces (2-3 cm)
  • 180 g onions, cut in 8 pieces then separated into layers
  • 200 g carrots, sliced (1 cm)
  • 190 g cauliflower, cut in pieces (4 cm)
  • 50 g dried apricots, cut in pieces (1 cm)
  • 1 Tbsp curry powder
  • 1 Tbsp ground cumin
  • 1 Tbsp ground coriander
  • ½ tsp ground black pepper
  • ¼ - ½ tsp garam masala, to taste
  • 70 g fresh baby spinach
  • 270 g tinned borlotti beans, drained (1 x 400 g tin)
  • fresh coriander leaves, for garnishing
