Courgettes
Summer is the season for courgettes, when they are ripened by the sun. They grow well, in many situations. Versatile and tasty, courgettes can be chopped in a salad, added to a pasta dish, cut into pieces in a stir-fry, or a risotto. Choose courgettes that are shiny and plump, and heavy for their size. They do not need to be peeled before eating, and can be eaten raw for everyday snacking.
